confused stomach

Aloha!

I don’t think my body knows what time zone its in since I’ve been in 3 different time zones in the past 4 days.

First Hong Kong was +15 hours from Texas, then daylight savings happened and it became +14. Then I went back home to Texas on Monday, managed to flip my time back and now I’m in Hawaii which is -4 hours from Texas.

Sleep-wise, I’ve been doing alright – other than getting extremely sleepy around 8pm and getting up at 5am, but I think what’s most confused is my stomach. I’m hungry alllll the time. Or at least thats what it feels like.

I’m always ravenous when I wake up.

So this morning I turned to a cup of greek yogurt.
Greek yogurt and I have been on the outs for a while (kind of like overnight oats).

But it’s slowly finding its way back into my diet.

First I added some greek yogurt to half a papaya and topped it with some granola.

Then I added a small sliced banana, a little granola for some crunch, and a sprinkle of peanut flour to the remaining yogurt.

Totally hit the spot.

Eventually the sun came up and after finishing some school stuff, I headed over to the beach for a walk.

I ended up running a little bit, but walked the majority. About 5.25 miles total?

It’s so fun to walk here because the weather is always perfect and the scenery is gorgeouss.

I also like the fact that I can watch surfers while doing triceps dips on the benches.

Then I just sat and enjoyed the cool morning breeze before heading back.

After my walk I was hungry again. So I headed to lunch. Or rather breakfast since it wasn’t even 10am yet.

Who can say no to TWO breakfasts in one day?
Not me, thats for sure.

I love that they offer brown rice everywhere on this island.

After breakfast number two I continued snacking my day away while doing errands and such.

And now it’s already 9:50pm and time for bed!

chocolate kitchen sink muffnies

I finally bought  borrowed salt some from the restaurant downstairs in order to complete my muffins that I was planning on making the other day.

I was actually planning on re-making the chocolate pb muffins I made following kabocha fashionista’s chococonut muffin recipe last week, but then I realized I didn’t have half the ingredients.
It wasn’t just the salt I was missing…

So I moved on to plan b.

Plan b = multiple substitutions + crossed-fingers in hopes of the muffins somewhat turning out.

And they did!

Chocolate Kitchen Sink Muffnies
[adapted from Kabaocha Fashionista's Chococonut Muffins]

- 1/2 cup whole wheat pastry flour
- 1/2 cup ground almond meal/flour [I used trader joes almond meal]
- 1/4 cup peanut flour
- 1/4 cup cocoa powder
-  1/2 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1/2 T pure vanilla bean paste (or pure vanilla extract)
- 1/3 cup light agave syrup
- 2 T honey almond butter
- 1 cup unsweetened almond milk
- 3 squares endangered species dark chocolate [chopped into mini pieces]

Mix wet ingredients into dry and bake at 350 F/175 C for 20-25 minutes. After baking, allow muffnies to set for a bit in the muffin tin (~10 mins), then move onto wire rack to finish cooling. Don’t leave in the muffin tin until completely cooled because moisture will build at the bottom. Best if stored in fridge once cooled.

They look like brownies on the top and are slightly dense, yet still uphold a partial muffin like texture towards the bottom. Plus the tiny endangered species chocolate pieces melt into the muffnies making them more chocolatey while the larger remaining pieces leave a yummy surprise when you bite in.

It’s perfectly delicious eaten on its own and just as delicious as a topping on some chocolatey overnight 20 minute oats.

Which is the way I’ve been enjoying the muffnies every morning.

 I’m not going to lie, I totally think about this breakfast during my workout. Motivation to finish strong? I’ll take it!

5 Newbies

Just as I thought…breakfast has gone back to the sweet side.

For two days in a row I’ve been eating:

1 barbaras shredded wheat puff + 1 weetabix + 1 chocolate pb muffin + 1 serving true vitality chocolate protein powder + unsweetened almond milk + 1 T peanut flour

Did you know that weetabix in the US is distributed by Barbara’s bakery?? I’ve been eating it for years and I JUST realized it! No wonder I like it so much. Barbara has great taste :)

And theres a chocolate flavor?? – why have I not been aware of this?

I learn something new everyday.

Speaking of new…I love trying new things, and recently I’ve come across quite the smorgasbord of new things. Some that I love, some not so much.

1) endangered species chocolate

I came across this sweet treat at Whole Foods. Usually I don’t really eat the items they put out for you to taste, but since it was free chocolate I kind of just had to. Plus it was in a wrapper. I’ll be the first to admit it – I’m a total germaphobe. Who know’s where people hands have been when they reach into those sample bins of fruit and chips??

I now have a whole bag of these chocolates on my kitchen counter.
That’s how good they are! They have them in actual bars size too and I really want to try the golden berry and lucuma bar, but the individually packaged ones are good for passing out on Halloween…and for me to practice single-serving self control. ;)

And for those of you who are vegan or gluten free, you can eat them too! They’re all certified vegan and gluten free.

2) Multi-Green kombucha

Ok, so I’m not new to kombucha, but this is a new to me flavor.

 I’m not really sure why I never tried it, but I actually like this one a lot more than a couple of the other ones I’ve tried. It’s not as sweet and it’s the first one that didn’t explode on me in a while.

3) Tera’s Whey

I’ll admit it. I got suckered into buying this partly because of the packaging. It looks good, right? And for $4 bucks an ounce, it better be good!

The verdict?
belch.  Not a fan at all.

I guess I just can’t get over the taste of stevia.
I should’ve known since I’m not a fan of Jay Robb’s or Sunwarriors powders, since they both contain stevia of some sort, but of course I didn’t learn my lesson the first two times.

3rd times the charm? Lets hope the lesson has been learned here – No more stevia protein powders for me.

4) Spiru-Tein

After being unable to find my favorite protein powder multiple times (how many times can one protein powder be sold out?), I settled for this one. It’s quite similar in taste. A little sweeter maybe? I guess it’s nice to change it up every once in a while though.

But yesterday I went to WF’s again and guess what I found after a month of searching??

Last one on the shelf. So of course I had to buy it!

Spiru-tein may have just earned a spot on the back shelf for a while…

5) kiwi berries

I’m not sure what I was expecting when I bit into one, but I was legitimately surprised to see that it looks exactly the same as a kiwi on the inside!

Just a miniature version.

And it tastes just as it sounds – like a kiwi mixed with a berry.
Let’s just hope I’m not allergic to these since I’m allergic to actual green kiwis.
