I couldn’t help but hum Katy Perry’s ‘Hot N Cold’ as I was thinking about todays post because that’s pretty much how our weathers been lately.

I actually had the opportunity to turn my ceiling fan on earlier this week. First time this year! But then the next couple days the weather cooled down a bit, jackets came out, and the fan went off. But we’ll be warming back up to the 70s today so I guess it’s safe to say spring is in the air! (I hope I didn’t just jinx it for us, Texans. If so, I apologize.)

My eats have been rather ‘Hot N Cold’ lately too. I was totally craving smoothies and juices earlier this week and then as it became more chilly, I was turning to the more stick to your bones kinda foods.

Like oatmeal.

Ok, so this may not be the prettiest looking of foods, but I guarantee it’s tasty, especially on a cold dreary morning. Just 1/3 cup oats + 1 cup almond cashew hazelnut milk + 1tsp chia cooked until 80% done. Then I added in an egg and stirred the whites around while letting the yolk just sit and poach until the egg whites were all mixed in. Before eating, I poked the yolk and let it run all over the oats. Mmm.

This’ll warm you right up! Did you know seaweed/nori is especially good for protecting us against toxins like radiation? Eat up, friends :)

As for the cold:

I’ve especially been loving acai bowls lately. It’s usually something I only crave in Hawaii but I’m so glad for these sambazon frozen acai smoothie packets so I can whip up bowls of my own whenever I please.

I added frozen bananas, strawberries, and blueberries to the mix along with some almond cashew hazelnut milk to get everything moving along. Topped with fresh raspberries, blueberries, and a sprinkle of cranberry flax. YUM.

‘soft serve’ has also been making an appearance lately as some post-dinner sweetness.
Just frozen banana + frozen blueberries + the teeniest amount of almond milk in the vitamix and blended until combined. Oh soo creamy. Berry flax was added for extra yumminess.

And I’ve taken a cue from Amanda and brought back some weetabix sprinkled yogurt-y breakfasts. I usually put weetabix in milk, but i actually think I love it more on top of yogurt. Loving the added crunch.

And lastly, smoothies! A refreshing blueberry-mint smoothie was enjoyed this week. So creamy I ate it with a spoon, thanks to the 1/4 avocado. {recipe here}

Balanced with a hot cuppa tea.

Wondering if this warmer weather will stick around because I don’t see myself getting off this smoothie/acai bowl train anytime soon. Otherwise I’ll just have to suck it up and sip and freeze :)

If you like nut butter, or even if you don’t…Make this!

Vanilla Maple Flax Cashew Butter

- 2.5 cups lightly or unsalted dry roasted cashews
-  5 T ground flax
- 3 T pure maple syrup (none of that imitation stuff!)
- 1 T pure vanilla extract or pure vanilla bean paste

Using a food processor, grind the roasted cashews until creamy. It could take anywhere between 5-10 minutes. Add ground flax and continue to grind until incorporated. Add maple syrup and vanilla extract and continue to grind. It may ball up and seem like it got stuck, but just keep the processor going. It’ll eventually smooth out again. Once smooth scoop out and…eat.

You won’t regret it!

And if you do…just mail it to me. I’ll eat it. No wasting allowed over here :)

I’m on my way to Asia right now…I should’ve just started my trek over there not too long ago.

Actually, I probably just finished wiping down my seat, arm rests, tray table, and window pane/wall with wet wipes. Like I mentioned…I’m a germaphobe. But seriously, those things are dirty! I have the black wet-wipes to back it up. But I doubt you want to see it…

So let me ask you this!

What’s your favorite nut butter? - Almond and cashew butters are my favorite!

Anyone else wipe down their airplane seats or it is just me? - I have a feeling I might be alone on this one…

Chocolate-Brown Pancakes

So the other night I was sitting with my mom and sister and I began talking to my sister about lady gaga and how my mom had been watching a lady gaga special on mtv the night before, when my mom pipes into our convo and says…”I think she might be kind of weird.” Needless to say my sister and I had a good laugh. Seriously?…Just kind of weird?  She’s Lady Gaga!  I’m pretty sure she’s so well recognized because of her desire to be different.  Which I have no problem with…whatever floats your boat :)

I just felt like sharing.

Now onto the best meal of the day.  I was feeling both oats and pancakes, but in the end pancakes won out since I had the extra time to make them.  It was a bit on the brown side today…

But that didn’t keep it from being some of the best pancakes I’ve ever made!  I ate every last bite, even though it was borderline too much.  I’m just going to say I purposely made them this way because one of my favorite foods just happens to be this color.

Chocolate-Brown Pancakes

  • 1/2 cup Kodiak Cake Mix
  • 1/3 cup water
  • 2 huge T organic low-fat cottage cheese
  • 1 T ground flax
  • ~ 1-2 T peanut flour
  • 1/2 t extra virgin coconut oil for greasing pan
  • 1 banana, sliced into rounds

Chocolate PB Sauce

  • 5 t chocolate pb2
  • 4 t peanut flour
  • water until right consistency

Combine first 5 ingredients (up to peanut flour) and stir until combined.  Grease pan with coconut oil and cook pancakes at medium low heat.

I layered bananas and chocolate PB sauce between each pancake and topped off with more bananas, pb sauce, walnuts, and a sprinkle of reduced fat shredded coconut.  Those blackish specks may not be all that attractive looking, but have no fear, its just chocolate!

I have to go get a shot in my arm today at the clinic.  I’m not really looking forward to it…

What’s your greatest fear in life?  I’m not necessarily deathly afraid of shots.  I just don’t like them.  What I do dislike and fear though is spiders.  They creep me out.
