the food front

todays been a rather successful day on the {healthier} food front.
{woohoo! – it’s been a while…}

i started my morning with carrots n cake’s 2 ingredient pancake.

 i wasn’t sure how i’d like it given that i don’t eat bananas all that often, but after i made it for the first time last week, i’ve been eating it non-stop. i’m pretty sure i ate it for breakfast AND lunch last thursday. i think that alone should tell you how good it is.

and it’s seriously the easiest hot breakfast to make. ever.
1 mashed banana + 4 T egg whites or 1 egg stirred together
it’s that simple.

sometimes i add in some cinnamon and chia seeds.  last week i almost added cayenne instead of cinnamon because the jars look so simlar.  good thing i spotted it right before tipping the jar. i don’t know how well i would’ve handled a spicy pancake…

today i topped mine with smooth almond butter, greek yogurt, & cinnamon. yum.

i had to run some errands around lunch time and ended up going to whole foods to pick up a few things, which meant i could also pick up lunch from the food bar.

on a bed of raw chopped kale, i added spicy broccoli salad, some kind of slaw, detox salad, and roasted balsamic tofu.

i ended up eating a little over 1/2 the box and than finishing up with a bowl of plain 365 greek yogurt {my favorite!} mixed with a spoon of crunchy freshly ground peanut butter i picked up at whole foods.

i’ve never really been a big peanut butter person other than in sandwiches, oatmeal, and m&m’s, but lately i’ve been eating it by the spoonful like it’s my full-time job.
it’s just soo good.

a little later i had 2 green figs and a bowl of perfectly ripe and cold watermelon.

i’m trying to eat as much watermelon as possible before the season is over…which in all honesty is not very hard for me to do. i’m pretty much a bottomless pit when it comes to watermelon.

and now i’m about to go eat dinner which will be the remainder of my box of veggies from lunch as well as a jalapeño turkey patty & some green beans.

i’m sure 1 or 2 spoonfuls of peanut butter may will also be eaten before i go to bed :)

Cuppa Breakfast

Lately I’ve become the queen of eating breakfast in the car.

I’m all for getting up extra early so I can sit and enjoy my breakfast with a hot cup of tea or coffee, but when my wake up call is at 5am, I don’t know how much earlier I can get up.
I mean, the sun isn’t even up yet! – I don’t know how all you early birds do it…

Since I left town last Sunday morning, I haven’t been getting up any later than 6am.

Sunday morning I was up early to catch my flight to Richmond, Virginia.

I had just enough time to make a almond butter ‘cream cheese’ spread for my toasted english muffin to take with me on the road. The ‘cream cheese’ ended up being a keeper!

It was actually just a couple tablespoons of non-fat greek yogurt mixed with ~1 tablespoon almond butter.

Probably a lot better for you than cream cheese too. And it’s really easy to make vegan! – Especially now that So Delicious sells non-dairy greek yogurt! I’m excited to try it, but haven’t seen it in stores yet.

Monday and Tuesday I was up early to catch my sisters golf tournaments and basically had the same breakfasts both days.

Oats in a cup + 1 banana was consumed both days

I brought with me a small ziplock bag of regular oats (coaches oats) and all I did was pour it into a cup and added some hot water over it. 5 mins later the water was all soaked in and the oats are ready to go.


No microwave or stove necessary.

I topped my oats with the lemon poppyseed muffins I made on Saturday.

I promise they were not that ugly when I first put them in the bags.
Tip of the week: muffins don’t transport so well in ziploc bags.
Just look at the picture above…

On the bright side, two bags of smushed muffins equals perfect oat topper.

Monday I ate them in the car and Tueday they were eaten on the course as I was watching my sister play.

Makes walking and eating a breeze (and watching golf a little more fun ;) )
I wouldn’t recommend bringing a metal spoon though…(it wasn’t so convenient carrying it for the 15 holes after I had finished my oats.)

Wednesday I was up bright and early to catch my flight from Richmond to Boston, MA. Which meant another breakfast in a cup eaten on the way to the airport.

It was basically these eggs and fruit, but in a cup.
Two separate cups. I don’t think eggs and fruit go so well together…

Once we got to Boston, we drove directly to Providence and thats where I’ll be the next couple days. And I’m more than excited about my stay here because not only is this city gorgeous (even when its rainy out)

But they’ve been rated the 3rd best foodie city in the United States!

I can certainly see why because I’ve been having amazing food since I got here.
So much for getting back on track, huh?

Last night we had italian food at a place called Andino’s. If you’re ever in this area, its definitely worth a visit.

Delicious food and the portions are HUGE!

Then this afternoon, we continued our Italian kick and ate at an Italian marketplace, Costantino’s Venda Ravioli. It was a cute whole in the wall place that was part market – part restaurant.

There was a massive deli counter filled with meats, cheeses, and freshly made italian dishes that went all the way around the store.

I ended up ordering a fresh mozzarella, basil, and tomato sandwich with a drizzle of balsamic vinegar.

Party in my mouth.
The bread was super crisp, just the way I like it, and everything inside tasted so fresh.

Tonight we’re leaving Italia behind and going to Red Stripe, which is classified as a Brasserie. So I’m guessing New American meets French – type food? I guess I’ll see!

WIAW # 5: Ready in 5. Or less.

I thought I’d take a slight break from Bordeaux [see previous days 1, 2, 3 here] and join in on some WIAW fun today :)

Peas and Crayons

Everything I ate today was basically ready in under 5 minutes. And not on purpose.

This morning I started with half a banana before heading off to my Wednesday cardio strength class, which ended up being AWESOME.

After class I chugged a pb + banana+ chocolate protein smoothie.

I used the remainder of my banana from earlier this morning, 1/2 cup unsweetened almond milk, 1 packet chocolate true vitality, 5 ice cubes, and 1/2 tablespoon peanut flour.

My official BREAKFAST was a waffle a la kodiak cakes.

Drizzled with manuka honey.

I don’t think I’ll ever tire of waffles. They’re just that good.

Then it was time for some school-ing…

and munching…

I may have had a few too many of these dark chocolate dipped rice cakes.
My excuse: they were mini

Then it was time for LUNCH. YAY :P

On the menu:
tuna
refried beans
corn cakes
hummus
tomatoes
avocado 

That can only mean one thing:

BUILD YOUR OWN CORN CAKES! 

Yes, i see that my lunch came out of cans, but it’s alright every once in a while. Plus the convenience is just too awesome.

I bought these corn cakes in France and love how perfectly thin they are. Perfect for piling on the toppings.

I mixed the tuna with some hummus and piled it on top of the corn cakes with some avocado and tomato slices.

Dessert was just as fantastic.

I sliced up part of an apple and banana

Added some sunbutter+almond milk

Mixed it all in and stuck it in the microwave for 20 seconds (x’s 2)

and Voila!

Okay okay, so it tastes a whole lot better than it looks. I promise!
And it’s guaranteed to satisfy that sweet tooth.

But of course I still had a couple chocolate cat cookies a little later on ;)

I ate a bazillion of these. Seriously, I don’t think I can buy them anymore.
I can’t stop eating them!

Then DINNER!

Roasted up a diced sweet potato sprinkled with paprika, cayenne, and a touch of cinnamon in the oven
[okay this may have taken slightly more than 5 minutes - but I don't count the roasting time]

Mixed it with leftover tuna from lunch, squirted on some ketchup and mustard and it was ready.

Again, tastes a lot better than it looks!

Dessert was something that I’ve become slightly obsessed with over the past couple days.

Baked Microwaved Apples

I diced up an apple, sprinkled it with cinnamon, ginger, and a touch of paprika

Then put it in the micovwave for 30 seconds (x’s2)
Sprinkled on some almond meal.

Perfectly warm and delicious. AND tastes like fall :)

Speaking of fall…

We’re only two days away from the first day of Autumn!

So…enjoy these last couple days of summer!!
