I couldn’t help but hum Katy Perry’s ‘Hot N Cold’ as I was thinking about todays post because that’s pretty much how our weathers been lately.

I actually had the opportunity to turn my ceiling fan on earlier this week. First time this year! But then the next couple days the weather cooled down a bit, jackets came out, and the fan went off. But we’ll be warming back up to the 70s today so I guess it’s safe to say spring is in the air! (I hope I didn’t just jinx it for us, Texans. If so, I apologize.)

My eats have been rather ‘Hot N Cold’ lately too. I was totally craving smoothies and juices earlier this week and then as it became more chilly, I was turning to the more stick to your bones kinda foods.

Like oatmeal.

Ok, so this may not be the prettiest looking of foods, but I guarantee it’s tasty, especially on a cold dreary morning. Just 1/3 cup oats + 1 cup almond cashew hazelnut milk + 1tsp chia cooked until 80% done. Then I added in an egg and stirred the whites around while letting the yolk just sit and poach until the egg whites were all mixed in. Before eating, I poked the yolk and let it run all over the oats. Mmm.

And msg-free miso soup. with extra seaweed.

This’ll warm you right up! Did you know seaweed/nori is especially good for protecting us against toxins like radiation? Eat up, friends :)

As for the cold:

I’ve especially been loving acai bowls lately. It’s usually something I only crave in Hawaii but I’m so glad for these sambazon frozen acai smoothie packets so I can whip up bowls of my own whenever I please.

I added frozen bananas, strawberries, and blueberries to the mix along with some almond cashew hazelnut milk to get everything moving along. Topped with fresh raspberries, blueberries, and a sprinkle of cranberry flax. YUM.

‘soft serve’ has also been making an appearance lately as some post-dinner sweetness.
Just frozen banana + frozen blueberries + the teeniest amount of almond milk in the vitamix and blended until combined. Oh soo creamy. Berry flax was added for extra yumminess.

And I’ve taken a cue from Amanda and brought back some weetabix sprinkled yogurt-y breakfasts. I usually put weetabix in milk, but i actually think I love it more on top of yogurt. Loving the added crunch.

And lastly, smoothies! A refreshing blueberry-mint smoothie was enjoyed this week. So creamy I ate it with a spoon, thanks to the 1/4 avocado. {recipe here}

Balanced with a hot cuppa tea.

Wondering if this warmer weather will stick around because I don’t see myself getting off this smoothie/acai bowl train anytime soon. Otherwise I’ll just have to suck it up and sip and freeze :)

Can you tell I’ve been listening to christmas music?

I’ve been particularly ‘jolly‘ about a certain fruit lately.

PERSIMMONS

They are one of my all time favorite fruits!

Fuyus or Hachiyas. Don’t matter which one, I like them both!  It’s a shame their only in season during the fall.

I recently got these fuyus, and they’re ginormous.

Here is one of them (on the right) compared to the ones I normally see at the grocery store (two on the left).

I’ve eaten so many I’m surprised I haven’t turned orange yet.

And look!

They’re almost as big as my face!

I also peeled and froze a hachiya persimmon from our backyard the other day to add to my smoothie, but I forgot about it :(

So instead I had this concoction this morning.

I think smoothies taste even better when it’s cold out. I was totally freezing after eating this, but nothing a hot cuppa joe-nog can’t fix.

I’m totally obsessed with that silk nog I got a couple days ago. So i’ve been nogging it up, since I know it won’t be around for much longer!

Its really finally beginning to feel a little bit more like the holidays around here. The weather has slightly gone down to semi- Nov/Dec appropriate temps. And on Monday it may drop below 30F!! (i loveee the cold!).

AND my inbox has been stuffed to the brims with emails involving holiday baking and christmas shopping. Can you say online shopping?? And baking??

Every holiday season I bookmark recipes like crazy, especially since cookie, cake, and pie recipes are everywhere, but I never actually get around to making any of them. I’m hoping to at least make a couple this year..

During one of my study breaks earlier this week I made a quick batch of flourless chocolate walnut cookies that were simply amazing.

Crisp on the edges and chewy in the middle.

I halved this recipe and the only additional change I made was decrease the amount of powdered sugar by 1/4 cup (so i used a total of 1.25 cups). I’d recommend making the full recipe though because these cookies go fast! I also think they’d be amazing with almonds if you’re not really a walnut fan. Or if you’re just an almond fan, like me :)

I don’t think much more baking or online shopping will be happening around here for the next week and a half though. I have finals starting next week and need to really crack down on those books!

I may or may not be taking a hiatus from my blog for a bit because I have an overwhelming amount of things to get done in the next two weeks. So if i’m away for a while, you know why! Otherwise I’ll try to pop in to say ‘hi’ when I get the chance!

WIAW #4 – Home edition

Evenin’ Oaties!

I finally made it home yesterday after many many hours on the road. Too many and boy am I glad to be back and eating the foods I love. Road trip food is fun to eat – to an extent. Then you just start missing your usual foods from home.

So without further ado here’s what I ate Wednesday!

Peas and Crayons

I made sure to get up early this morning to make it to the gym for a cardio strength workout class. After sitting in the car for almost 2 days I wanted nothing more than to get in a good sweat sesh.
Mission accomplished.

After my workout and a quick shower, I had just enough time to blend something up before heading off to my eye appointment. Actually I was totally late to my eye appointment, thanks to my shake. But it was totally worth it :P

[8 ice cubes, 1 packet chocolate protein powder, 1/2 cup unsweetened chocolate almond milk, 3/4  cup unsweetened almond milk]

After my eye appointment and a couple errands, it was lunch time!

My dad had a strawberry waffle at the waffle house yesterday morning on our drive home and I wanted one for myself so that’s exactly what I had. And mine was wayyy better. Just sayin’ ;)

Lunch was followed up by snacks of all sorts.

Followed up with a a handful of cherries from this bowl.

And a block or two [or three...] of dark chocolate.

Now I’m off to unpack my duffle, finish up laundry, and pack up my suitcase because tomorrow I’ll be off once again!

Sooo behind on school+readings+hw thing and must get working on that too.
