protein pancake

Hello!
It’s pretty late and I’m way overdue for some sleep, but I wanted to pop in and share with you the breakfast I had this morning.

I’ve been following the Tone It Up girls for sometime now, and time and time again their perfect fit protein pancake has come up as peoples favorites. I made it once last year with Garden of Life Plant Protein Powder and it came out tasting like paper. No joke. After that I set this recipe on the back burner.

Ever since Monday’s post I’ve been thinking about pancakes and with no pancake mix at home it was the perfect opportunity to try the protein pancakes once again. This time I had perfect fit protein that I ordered a few weeks prior (they have sample packs to order and try – 3 packs for $5, I think).

Just mixed everything together and cooked it in some coconut oil, then topped with more coconut oil, strawberries, and blueberries.

While the pancake doesn’t have the exact same consistency as a regular pancake (they’re a bit more dense) they do stand in as quite the suitable alternative. I think the protein powder used will definitely affect the texture of the pancake in the end. Perfect Fit protein is a brown rice based protein, but I’m pretty sure Plant Fusion or Vega would work well too.

This is a nice and filling breakfast that I’ll probably interchange with this 2 ingredient pancake on the days where I don’t have pancake mix at home.

Just 1 large egg + 1 mashed banana mixed up and cooked in a pan. Mix-ins (flax, chia, juicy blueberries, nut butter, etc.) are always fun additions.

Otherwise, it’s kodiak cake pancakes all the way : )

thanksgiving + pancakes

“Oh, the weather outside is frightful
But the fire is so delightful
And since we’ve no place to go
Let it snow! Let it snow! Let it snow!”

That’s just my wishful thinking. No snow in sight here. Although the weather was looking a bit frightful yesterday. Just a little though.

A cold front seems to have rolled in yesterday afternoon and our temps were dropping by the hour. It brought some strong winds and dark skies, but nothing too crazy.

Today the sun is back out bringing bright skies and temps in the 40s. Loving it.

Yesterday was the perfect day to just lounge around inside drinking hot tea and roasting marshmallows by the fire.

I only accomplished hot tea.  No fire or marshmallows.

I don’t think I need any marshmallows though after my sugar coma on thanksgiving day.

Speaking of thanksgiving, I hope everyone that celebrated had a lovely thanksgiving day full of good foodfamily, and fun!

I know I did!  I had fun making mac & cheese and haupia macadamia nut bread pudding. And eating of course! :P

Lots of yummy foods, including:

stuffing (my absolute favorite thanksgiving dish!), mashed potatoes, mashed sweet potatoes, butternut squash, brussel sprouts, smoked duck, ham, turkey, beef filet, shrimp, mac & cheese,

fresh fruit, kimchee, and other side dishes.

Plus an assortment of desserts:
Pecan pie, petit fours, pumpkin pie, raspberry cake, carrot cake, and an unpictured coconut cream pie (that was SOO good!)

I could’ve probably just eaten stuffing and dessert and I would have been perfectly happy. But of course I tried almost everything at the table…

I couldn’t finish everything on that plate, but I definitely enjoyed every bite.

And now that thanksgiving is over it only means one thing. Countdown to christmas! 

So many christmas lights and decorations are already up around town!

To be a little more festive I tried to have a more holiday-ish breakfast this morning.

Cinnamon Apple Pancakes

It wasn’t super festive, but it’s more festive than the cereal I’ve been eating all last week.

Usually I cook the apples and top them on the pancakes, but this time I added them to the pancakes.

Kind of like apple upside down cake pancakes.

I just poured the pancake batter (my go-to kodiak cake mix) onto the pan and added the sliced apples onto the top. Once I flipped the pancakes the apples cooked with pancakes.

Then I topped them with honey almond butter and cinnamon.

I’m full and ready for the holidays :)

An Oldie, But a Goodie

It may have taken a while, but I made it home!

My flight was set to leave Boston at 6:30pm yesterday, but was delayed multiple times due to engine troubles. We finally left Boston around 8:30pm and were on our way back to Dallas.

Usually I can’t really sleep on flights but I was so tired I fell asleep during the last leg of the flight.

Then we landed and I thought we were home. But we weren’t.

Apparently there were too many thunderstorms and clouds in Dallas we had to divert down to Waco and fly back up North to land in Dallas. But since we had been taking the long route to Dallas from Boston, avoiding clouds from St. Louis to Dallas , by the time we made it to Waco our plane didn’t have enough gas to get us to back to Dallas. We ended up flying further down south to Austin to get fuel up.

It was quite an eventful night to say the least. I finally made it home this morning at 4am, slept a bit and woke up more than ready for breakfast.

No more breakfast in cups for me!

I went back to an old favorite. Pancakes.

An oldie, but a goodie.

With no trips to the grocery store in over a week the only available fruit this morning was a lone apple I brought back with me from Providence.

No worries though. I love apple pancakes.

This time I added diced apples into the batter. Best decision of the day, I’d say.

Fluffy and apple stuffed pancakes are really quite the way to start the day. Especially when your right eye all of a sudden feels a piercing pain and waters up like no other. And repeats every 5- 10 mins.

It all started midway through flipping pancakes. I would feel a pain in my eye, it would water up and then continue to be painful for another 20 seconds then go away. After the pain it would feel like I had something in my eye, then the pain would come again in a bit.

I was hungry though and wanted those pancakes!

Apple stuffed Pancakes

1 diced apple – 1/2 into the pancake batter and 1/2 for the topping

2/3 cups kodiak cake mix

2/3 cups water

1 T almond butter

Maple syrup

This breakfast takes no time at all, but taste like I spent a long time on it. I just mixed the kodiak cake mix with the water, added the diced apples to the mix and cooked up the pancakes on a dry non-stick skillet.

Then I heated up the remaining diced apples with a splash of water in the skillet until soft, mixed it with almond butter and topped it on the pancakes.

[Side note: It's been 9 days since I last had almond butter. It was a necessity.]

A slight drizzle of maple syrup and the first bite was taken.

YUM.

My eye pain continued as I ate so after I had my last bite [sad face] I called my optometrist.

Luckily she could fit me in 30 mins later.

The verdict?

 I cut my eye. Right below my pupil.

Who would’ve thought? I don’t know how it happened, but it happened so now I have a lovely stick of antibiotic ointment to rub on my eye twice a day, along with a bottle of pain reliving drops.

Luckily it was something minor! In about a week my eye should be as good as new :)

And now that I’ve eaten the last piece of fruit in my house, I need to go participate in one of my favorite pastimes. Grocery shopping.
