I couldn’t help but hum Katy Perry’s ‘Hot N Cold’ as I was thinking about todays post because that’s pretty much how our weathers been lately.

I actually had the opportunity to turn my ceiling fan on earlier this week. First time this year! But then the next couple days the weather cooled down a bit, jackets came out, and the fan went off. But we’ll be warming back up to the 70s today so I guess it’s safe to say spring is in the air! (I hope I didn’t just jinx it for us, Texans. If so, I apologize.)

My eats have been rather ‘Hot N Cold’ lately too. I was totally craving smoothies and juices earlier this week and then as it became more chilly, I was turning to the more stick to your bones kinda foods.

Like oatmeal.

Ok, so this may not be the prettiest looking of foods, but I guarantee it’s tasty, especially on a cold dreary morning. Just 1/3 cup oats + 1 cup almond cashew hazelnut milk + 1tsp chia cooked until 80% done. Then I added in an egg and stirred the whites around while letting the yolk just sit and poach until the egg whites were all mixed in. Before eating, I poked the yolk and let it run all over the oats. Mmm.

And msg-free miso soup. with extra seaweed.

This’ll warm you right up! Did you know seaweed/nori is especially good for protecting us against toxins like radiation? Eat up, friends :)

As for the cold:

I’ve especially been loving acai bowls lately. It’s usually something I only crave in Hawaii but I’m so glad for these sambazon frozen acai smoothie packets so I can whip up bowls of my own whenever I please.

I added frozen bananas, strawberries, and blueberries to the mix along with some almond cashew hazelnut milk to get everything moving along. Topped with fresh raspberries, blueberries, and a sprinkle of cranberry flax. YUM.

‘soft serve’ has also been making an appearance lately as some post-dinner sweetness.
Just frozen banana + frozen blueberries + the teeniest amount of almond milk in the vitamix and blended until combined. Oh soo creamy. Berry flax was added for extra yumminess.

And I’ve taken a cue from Amanda and brought back some weetabix sprinkled yogurt-y breakfasts. I usually put weetabix in milk, but i actually think I love it more on top of yogurt. Loving the added crunch.

And lastly, smoothies! A refreshing blueberry-mint smoothie was enjoyed this week. So creamy I ate it with a spoon, thanks to the 1/4 avocado. {recipe here}

Balanced with a hot cuppa tea.

Wondering if this warmer weather will stick around because I don’t see myself getting off this smoothie/acai bowl train anytime soon. Otherwise I’ll just have to suck it up and sip and freeze :)

Sunday marked the beginning of the year of the snake and we celebrated with family (minus my sis who’s away at school), friends, & food.

Apparently my brother and I decided we needed to match. And in an obnoxiously neon way.

We may have all been a bit ambitious with the serving size of each dish as once everyone filled their plates it still looked like we barely made a dent.
Lots of leftovers. No complaints.

Fast forward to today.

This morning after my workout i wasn’t really craving anything in particular for breakfast, so I turned to an old staple. Oatmeal.

The only problem with oatmeal is I feel like I don’t stay full for very long and find myself hungry rather quickly. In order to fix this problem I added in some extra protein.

- 1/2 cup rolled oats
- 1/2 cup unsweetened almond milk
- 3/4 cup water
- 1 egg*
- 1 T ground flax
- nut butter

Cook oats in almond milk + water over medium heat. Sprinkle in flax and continue stirring. Once oats seem to have absorbed just about all the liquid, stir in the egg. Continue to stir oats until egg is incorporated and cooked to desired consistency. Top with nut butter.

* 1 egg tastes adds so much more to the oatmeal than 1 egg white when it comes to flavor.  just sayin.

The oats were perfect for todays chilly & rainy weather and whether they ended up keeping me full longer or not (so far so good), they were deeeelicious.

breakfast porridge

It’s been a while since I’ve put my rice cooker to good use [and since my last post!], but this morning I was feeling like something warm after my workout so I loaded it up before leaving the house, set the timer, and when I returned home I had hot porridge waiting for me.

- 1/4 cup short grain brown rice
- 3 T porridge oats with wheat bran**
-  1.5 cups liquid [I used 3/4 cup milk + 3/4 cup water]
- a couple shakes of cinnamon
- dash of vanilla

Rinse the rice, and add everything into your rice cooker, set to porridge setting, preset timer, breakfast is served.

Super easy.

**The porridge oats with wheat bran is just a blend of rolled oats (88%) + wheat bran(12%).

I topped my porridge with fresh strawberries and blueberries.
No sweeteners needed when you have fresh juicy fruit

The short grain brown rice adds a nice chewy texture that goes so well with creaminess of the porridge oats and milk.

Eaten alongside a nice mug of steaming hot coffee + frothy milk.

Delish.
