Sunday marked the beginning of the year of the snake and we celebrated with family (minus my sis who’s away at school), friends, & food.

Apparently my brother and I decided we needed to match. And in an obnoxiously neon way.

We may have all been a bit ambitious with the serving size of each dish as once everyone filled their plates it still looked like we barely made a dent.
Lots of leftovers. No complaints.

Fast forward to today.

This morning after my workout i wasn’t really craving anything in particular for breakfast, so I turned to an old staple. Oatmeal.

The only problem with oatmeal is I feel like I don’t stay full for very long and find myself hungry rather quickly. In order to fix this problem I added in some extra protein.

bulked up oats

- 1/2 cup rolled oats
- 1/2 cup unsweetened almond milk
- 3/4 cup water
- 1 egg*
- 1 T ground flax
- nut butter

Cook oats in almond milk + water over medium heat. Sprinkle in flax and continue stirring. Once oats seem to have absorbed just about all the liquid, stir in the egg. Continue to stir oats until egg is incorporated and cooked to desired consistency. Top with nut butter.

* 1 egg tastes adds so much more to the oatmeal than 1 egg white when it comes to flavor.  just sayin.

The oats were perfect for todays chilly & rainy weather and whether they ended up keeping me full longer or not (so far so good), they were deeeelicious.

  1. Happy [belated] Chinese New Year, girlie! That’s definitely quite the gorgeous spread you guys have there. Leftovers are always a wonderful treat, not only because they save time in the kitchen, but because they bring back good memories :)

    As for oats, I usually only use an egg white in mine because using a whole egg changes the texture too much in a way that I don’t really enjoy. I make up for it with banana and almond butter though! And adding yogurt is always a favorite too.

    • Thanks girl!! :) mm mmm I don’t think we can ever go wrong with banana + almond butter. And I’ll have to try the yogurt one of these days!

  2. Happy belated Chinese New Year! It definitely sounds and looks like you had a wonderful time, all of the food looks amazing! :-) I adore leftovers of big feasts like that.

    I don’t like hot oatmeal, no idea why! But with overnight oats I like to have lots of fresh berries, a dollop of natural yogurt and a drizzle of honey :-) It definitely keeps me full!

  3. I just stumbled upon your blog but am loving it already! Happy Chinese New Year! Gong Xi Fa Cai hahaha. I enjoy a wide spread of dishes during CNY celebration – hard to resist while everyone’s digging in! Did you look forward to receiving angpaus from your relatives? :)
