Sorry it’s been forevs. I promise I still exist.
I know it’s been weeks since i’ve been on here and i totally jinxed myself in my last post when i said that I would be back very soon. As in under a week.
And that soo did not happen. Oopsie.

Let’s make this an easy post and talk about favorites since that’s something I’ve been having a lot of recently.

Lately lots of good breakfasts have taken place. I’ve been getting in a bit of fruit in the mornings and it’s been quite refreshingly delicious.

I like to pair my fruit with something savory and protein-filled like eggs.

I’ve also rediscovered quinoa. I sorta forgot about that particular grain for a while, but it’s made it’s way back into my diet. I love how it goes with just about everything and can be eaten sweet or savory.

The left quinoa bowl is topped with apples {cooked until softened with vanilla bean paste + cinnamon} & topped with maple almond butter, while the right quinoa bowl is topped with two runny eggs. Both were aamazingly good and warmed my belly.
If you’re getting tired of oats, or just looking for a change I highly suggest quinoa :)

Another favorite has been coconut flour waffles.

2 T coconut flour + 2 egg whites + 2 T almond milk + cinnamon = easy & delicious waffle

It’s also currently… kumquat season!!

These little citrusy fruits are my faaavorite during this time of the year. A bite of juicy sweetness with a hint of tang. Mmm. And it also means, Chinese New Year is juuuust around the corner. Yeeaaaa.

Freshly cracked coconuts are also currently being slurped down in a matter of seconds.

Sometimes I get really bad cramps in the arch of my feet, so I always tell myself that the potassium + electrolytes in these babies help with that, but truthfully, they’re just plain yum. Plus I love scooping out the coconut flesh to eat after drinking all the juice.

A special indulgence recently was milk tea with tapioca pearls. I haven’t had one of these in AGES, but I was totally craving it the other day and it hit the spot.

I think I became a bit over-caffienated afterwards, but it was well worth it.

And, i cannot lie. Of course I’ve had more than just one indulgence lately. There’s been lots of other things including lots and lots of chocolate.

In my defense, some of this chocolate is absolutely necessary.

It’s suddenly become much easier to get in my 1000mg of calcium each day. I wonder why ;)

I think daily vitamins need to come in chocolate form too. That would be lovely and I’d have no problem with having vitamins for dessert.

So there you have it – some of my faves!

  1. Oh I am so jealous of your fresh fruit! The only fruit we get fresh that we get at this time of the year that actually tastes of anything are apples, clementines, oranges and bananas. I’m so bored of them! Your waffle looks delicious, as does the chocolate. My favourites at the moment are English muffins and I’m also on a bit of a renewed quinoa kick :-)
