koko head, the beach, & pasta

Do you like my title?
I’m obviously super creative. It’s also foreshadow that this post is a bit random.

After a couple days of rainbows and drizzles, the sun finally began to peek out a bit more. Which meant I could make a second attempt at koko head since the first time I went it was too wet.

I don’t think I really want to attempt going down (or up) koko head on a slippery/muddy day.  That may not bode so well for the clumsy. Aka: me.

So with the sun out, I had my friend meet me there and we were off!

I love this hike because it’s a easy (as in you don’t have to put much thought into it) and fun workout where all you have to do is go up and come back down.

It was a bit windy up top, but the breeze was much appreciated after our trek up.

I also finally made it to the beach for some stand up paddling and sun snack time.

Those cookies were so good! I don’t know if it’s because I was extremely hungry or because they’re just that delicious. Maybe a bit of both.

After spending most of the day outdoors I worked up quite the appetite and our plans to eat italian food sounded perfect. I know italian food isn’t the first thing to come to mind when in Hawaii, but after seeing the stellar reviews La Cucina Ristorante Italiana received on yelp we couldn’t resist and made reservations to try it on our last night on the island.

I went with the squid ink pasta that came with calamari in a simple spicy garlic sauce.

Since the restaurant only has two people working – the chef in the back and the hostess/waitress in the front – it took quite some time for our entrées to reach us. But no biggie since we weren’t in a hurry to get anywhere.

And for dessert we shared the tiramisu and creme brûlée cheesecake. Both were absolutely delicious.

Overall, I’d say it’s a pretty good italian restaurant given that it’s in the middle of the pacific ocean.  I liked that their pastas are freshly made and more towards the al dente side.

Something else I’ve been doing in Hawaii, but failed to mention, is juicing. With the fiber, since I’m using a vitamix. I tend to juice in random spurts because I’ll crave it and then get fed up with it about a week or so later. Then a few weeks (or months) later I’ll crave it again and the cycle starts all over again.

This particular juice included:
1/2 cup water, romaine lettuce, spinach, blueberries, pineapple, mango, juice of a small lemon, wheatgrass, ginger, and a splash of acai juice all blended up until smooth.

I took my board out one last time (perks of having an evening flight) for a quick stand up paddle sesh with my friend, which ended up being an great workout since we paddled into the wind most of the time. And now i’m back in good ol’ Texas. Where it’s also wet and dreary out.

  1. Haha! I love it when you’re hungry and it makes everything taste extra delicious. And speaking of delicious, holy.wow does that tiramisu look good. I could take or leave pasta, but tiramisu? Be still my pounding heart. That and pizza are two Italian dishes that I swoon over. And as for rainy day activities, I love either curling up on the couch with a good book or getting my butt in the kitchen and baking up something delicious.

  2. I love Italian food! Well, maybe just pizza :) Tiramisu is something I’ve always wanted to try because I’ve heard it’s SO GOOD! Those snack cookies look delicious, as well!
    My favorite rainy day activities would have to be watching movies, reading a really good book, baking up the whazoo, and sleeping ;)
