Happy Friday!

I’m feeling rather random on this cloudy, but extremely warm [85F!], day so please bear with me.

Since ‘f‘ is for Friday and fifteen seemed a little excessive, five is the magic number today.

one.

Speaking of five. er.. five million…Today is THE day!

What…You don’t know what I’m talking about?

Mega millions! - Does that ring a bell?

It was $500 million, yesterday…

but today, it’s a record $640 million.

Yeah, so you better hurry out and pick your magic numbers because tonights the drawing!

two.

think thin creamy peanut butter is my new favorite bar.

The peanut butter flavor is always sold out so I end up getting the more chocolaty flavors, but omg! Yesterday as I peeled open the creamy peanut butter bar, it was love at first whiff. I was literally hit with the most delicious smell of peanut buttery goodness.

At 230 calories, it may seem a bit high in calories, but its a good snack after a workout given that it has a whopping 20g of protein and 0g sugar.

three.

the maze runner trilogy is a must read. especially with a side of peppermint tea.

i think i actually like this series more than the hunger games series! so go read.

btw, this tea is better than any other peppermint tea i’ve ever had.

it has some additional herbs that adds to its flavor and makes it super yum.

four.

i have re-established a love for sandwiches.

my panini press has been collecting dust for a while, but it’s officially been taken out of hibernation.

this cheese may have  also contributed to re-establishing my sandwich craze.

its especially amazingly delicious when its melted.
just look at it oozing out of that sandwich!

mmm.

five.

Since i sprained my ankle almost two weeks ago, I’ve been learning to love at-home workouts. So far so good.

As long as you have a set or two of semi-heavy weights, its actually quite fun. Plus there are so many possibilities.

I usually like to make up my own workouts at home, but there are also a lot of great pre-planned workouts out there.

One of my favorites lately has been tone it up’s drop 10 toning workout. It’s a really fun workout and especially great for me because its easy on the feet.

Tone It Up is a great site in general with many fun fitness and diet tips.

Ok, so that’s my five!

carrot cake cupcakes

Birthdays.

Don’t you just love em?

I do.

I also love birthday pancakes.

These weren’t anything particularly special, but blueberry pancakes are my dad’s favorite and since it was his birthday, that’s what he got!

so sweet and fluffy.

Since yesterday was my dad’s birthday it gave me the perfect excuse (not that I really need one) to bake up one of my all time favorites.

Carrot Cake.

It also just happens to be my dads favorite kind of cake.
or is it my favorite? i kinda forget. ; )

This year, instead of baking it in cake form, I made cupcakes.
Yeah, i know. I’m just so creative!
{please excuse my sarcasm, somedays i have a super sarcastic mind.}

Anyways, these cupcakes are deelicious and clock in at around 180 calories a pop. And that includes frosting!

They may not be as indulgent sounding as red velvet cupcakes or double fudge brownies, but I promise these are delicious. Once you take a taste, you’ll be all…red-velvet-or-fudge-brownie-who?
Or will you?

Either way, I guess you kinda just have to try them to find out…

Tropical Carrot Cake Cupcakes
makes 15 cupcakes

- 3/4 cup all-purpose flour
- 3/4 cup whole wheat pastry flour
- 1/2 cup sucanat or sugar*
- 1/4 – 1/2 cup flaked unsweetened coconut, reduced fat
- 1 t sea salt
- 2 t ground cinnamon
- 2 t baking soda
- 2 large eggs
~ 2 T canola oil
- 2 t pure vanilla extract
- 2 cups peeled & grated carrots
- 20 oz. can crushed pineapple in juice, drained

*feel free to up the sugar content if you like a sweeter cake. The pineapple sweetens the cake as well, but I’m guessing most would prefer at least 1 cup sugar. I tend to like things less sweet.

Preheat oven to 350 degrees F.
Drain the pineapple and set aside.
In a larger bowl combine all dry ingredients [flour, sucanat, flaked coconut, salt, cinnamon, baking soda] and set aside.
In a medium sized bowl, whisk eggs and add canola oil, vanilla, carrots, and pineapple. Stir to combine.
Pour wet ingredients into dry and mix until it all comes together.
Using an ice cream scoop, scoop batter into muffin tins lined with cupcake liners.
Bake for 16 to 19 mins, or until toothpick comes out clean.

Coconut Cream Cheese Frosting

 - 1 block (8oz) neufchâtel or reduced fat cream cheese
- 2-5 T extra virgin coconut oil, room temp **
- 1 t pure vanilla extract
- 1/2 cup powdered sugar***

**I used 3 T and my coconut oil was the same softness as room temp butter. Soft, but not yet melted.
*** use 1 cup powdered sugar if you prefer a sweeter and thicker frosting.

Using an electric beater, beat all ingredients in bowl until combined and fluffy. 

I loveee cream cheese frosting and this frosting is definitely cream cheesy.  The coconut oil adds a nice coconuty flavor and maintains the texture of the frosting which lessens the need for a buttload of powdered sugar.

It’s not so overwhelmingly sweet or decadent, that I think it’s actually totally acceptable as a breakfast pastry or afternoon snack.

At least that’s what I’m telling myself as I’m eying it across the table as I type up this post.

I think it’s snack time.

4 ingredient cookies

I love baking, but I’m not so much a fan of the clean up, so whenever I suddenly have an urge to bake, I usually aim to make something that requires few ingredients and is easy to clean up after.

Tonight I made some sunflower butter cookies.

4 ingredient flourless nut butter cookies

- 1 cup porridge oats with wheat bran or rolled/quick oats
- 1 cup of your favorite nut butter
-  3 T egg whites, 1 whole egg, or 1 flax egg
- 1/2 cup sucanat***

Preheat oven to 375 degrees F.
Whisk egg and sucanat with fork until combined.  Add nut butter and stir to combine. Fold in oats.
Using a small ice cream scooper, drop rounds onto parchment paper. Flatten mounds slightly as cookies do not spread.
Bake for approximately 11-12 mins. 
Immediately move cookies to cooling rack once out of the oven.

[ Depending on the size, cookies may require more or less time...my batch made 11 cookies total]

***I prefer cookies with less sweetener, but use more sucanat if you prefer a sweeter taste.

I think the natural taste of nut butter with a slight hint of sweetness is perfect.

I always forget how much I like sunflower butter until I taste it. Than I wonder why I don’t eat it more often.

 If you don’t feel like baking, feel free to make 5 ingredient crispies. Even easier! And just as delicious! :p

On the topic of easy sweet treats, one of my favorite sweet snacks lately has been this peanuty&chocolaty treat…

A deep chocolate vita top in a puddle of peanut butter sauce [peanut flour + hot water].

Soo yum.

Especially when the chocolate muffin top absorbs all the peanut sauce.

One of my favorite flavor combos!
