I had a post half written yesterday, but than I got all caught up with an 8 page report I had to do for school and by the time I finished that it was already past midnight. So the post just never happened.
But I made sure I’d be back today for WIAW!

Breakfast:
Overnight oats.
I made them last night before bed with my new silk nog and I could.not.wait. for breakfast this morning.
I actually had to get through my cardio sculpt class before getting to the oats, but so worth the wait!
Into an empty almond butter jar went 1/3 cup old fashioned oats + 1/3 cup silk nog + 1/3 cup water. I kept it simple because I wanted to taste the nog!
This morning I topped it with a sliced banana + crumbled chocolate walnut cookie
SOO yum.
followed up with a steaming cuppa joe-nog.
coffee + a generous splash of steamed silk nog.
I’ve already decided I’ll be having the exact same breakfast tomorrow morning!

LUNCH:
homemade kimchi & tofu dumplings.
with siracha!
Dinner:
one of my absolute favorites!

I love it because I can basically cook whatever I like and tonight it was:
broccoli, tofu, mushrooms, cod, turnips, spinach, mungbean noodles, scallop
Snacks:
[unsweetened almond] milk & [chocolate walnut] cookie.
heritage flakes + silk nog.
Hummus + homemade pita chips.
[fuyu] persimmon.
dark chocolate.
As you can see…I was feeling extra snacky today!
And now i’m totally pooped.
Time to go make my breakfast for tomorrow, then bed!

OK, SO much happening here that makes me happy! First of all, persimmons are clearly a gift from the heavens. Secondly, I need to get my hands on this Silk eggnog….love your uses of it.
And, thirdly, now I’m having a serious kimchi craving…..mmmmmm….love the idea of using it for tofu dumplings! Creative.

Hey there! I follow your blog and am not quite sure if I introduced myself (hola!). Oh well, I still want to ask you about the Silk Nog! Oh my goodness! Is it super sweet? Do you think it might save my super dab buckwheat hot cereal? (Cannot do oats anymore… intolerance.)
PS- Hot pot. Oh gosh. Give me the spicy side every time!

The silk nog is sweet, but not overwhelmingly sweet. I think a half cup of the nog has 12g of sugar? Which is not too bad compared to all the other nogs out there. I think it would be a wonderful addition to your buckwheat hot cereal! Sometimes I like to do 70% silk nog + 30% almond milk in my overnight oats when I don’t want it too sweet. Hope this helps!
