WIAW #9: extra snacky

I had a post half written yesterday, but than I got all caught up with an 8 page report I had to do for school and by the time I finished that it was already past midnight. So the post just never happened.

But I made sure I’d be back today for WIAW!

Peas and Crayons

Breakfast:

Overnight oats.
I made them last night before bed with my new silk nog and I could.not.wait. for breakfast this morning.
I actually had to get through my cardio sculpt class before getting to the oats, but so worth the wait!

Into an empty almond butter jar went 1/3 cup old fashioned oats1/3 cup silk nog1/3 cup water. I kept it simple because I wanted to taste the nog!

This morning I topped it with a sliced banana + crumbled chocolate walnut cookie

SOO yum.

followed up with a steaming cuppa  joe-nog.

coffee + a generous splash of steamed silk nog.

I’ve already decided I’ll be having the exact same breakfast tomorrow morning!

LUNCH:

homemade kimchi & tofu dumplings.

Dinner:

one of my absolute favorites!

I love it because I can basically cook whatever I like and tonight it was:
broccoli, tofu, mushrooms, cod, turnips, spinach, mungbean noodles, scallop

Snacks:

[unsweetened almond] milk & [chocolate walnut] cookie.

heritage flakes + silk nog.

Hummus + homemade pita chips.

[fuyu] persimmon.

dark chocolate.

 

As you can see…I was feeling extra snacky today!

And now i’m totally pooped.
Time to go make my breakfast for tomorrow, then bed!

thanksgiving + pancakes

“Oh, the weather outside is frightful
But the fire is so delightful
And since we’ve no place to go
Let it snow! Let it snow! Let it snow!”

That’s just my wishful thinking. No snow in sight here. Although the weather was looking a bit frightful yesterday. Just a little though.

A cold front seems to have rolled in yesterday afternoon and our temps were dropping by the hour. It brought some strong winds and dark skies, but nothing too crazy.

Today the sun is back out bringing bright skies and temps in the 40s. Loving it.

Yesterday was the perfect day to just lounge around inside drinking hot tea and roasting marshmallows by the fire.

I only accomplished hot tea.  No fire or marshmallows.

I don’t think I need any marshmallows though after my sugar coma on thanksgiving day.

Speaking of thanksgiving, I hope everyone that celebrated had a lovely thanksgiving day full of good foodfamily, and fun!

I know I did!  I had fun making mac & cheese and haupia macadamia nut bread pudding. And eating of course! :P

Lots of yummy foods, including:

stuffing (my absolute favorite thanksgiving dish!), mashed potatoes, mashed sweet potatoes, butternut squash, brussel sprouts, smoked duck, ham, turkey, beef filet, shrimp, mac & cheese,

fresh fruit, kimchee, and other side dishes.

Plus an assortment of desserts:
Pecan pie, petit fours, pumpkin pie, raspberry cake, carrot cake, and an unpictured coconut cream pie (that was SOO good!)

I could’ve probably just eaten stuffing and dessert and I would have been perfectly happy. But of course I tried almost everything at the table…

I couldn’t finish everything on that plate, but I definitely enjoyed every bite.

And now that thanksgiving is over it only means one thing. Countdown to christmas! 

So many christmas lights and decorations are already up around town!

To be a little more festive I tried to have a more holiday-ish breakfast this morning.

Cinnamon Apple Pancakes

It wasn’t super festive, but it’s more festive than the cereal I’ve been eating all last week.

Usually I cook the apples and top them on the pancakes, but this time I added them to the pancakes.

Kind of like apple upside down cake pancakes.

I just poured the pancake batter (my go-to kodiak cake mix) onto the pan and added the sliced apples onto the top. Once I flipped the pancakes the apples cooked with pancakes.

Then I topped them with honey almond butter and cinnamon.

I’m full and ready for the holidays :)

Happy Thanksgiving Eve!

So continuing on from yesterday

Sunday started out a little cloudy once again, but by the time we got ready to go, the sky’s were clear and perfect for an outdoor evening wedding.

Once we got to the Wailea golf resort we were carted up to the gold course where the ceremony was taking place.

The background was gorgeous! I love it when the water has that reflection look to it.

And how fun is their program + color coordinated fan? There were blue fans too!

The temperature was perfect so there was no need to use the fans, but they made for great decoration pieces!

The ceremony was short and very sweet.

Once the ceremony was over, pictures were taken atop the hill with family and friends. The first photo taken was with everyone at the wedding, which is over 40+ people, all lined up in one row while the photographer snaped the shot halfway down the hill. I’m curious to see how that photo turned out!

And then we headed down the hill to the clubhouse for appetizers and drinks on the terrace.

About an hour or so later we headed indoors where the reception/dinner was. Once we were all seated the groomsmen, bridesmaids, bride and groom danced their way in, to the tune of ‘marry me‘ like on glee! If you’ve ever seen the wedding episode where Finn’s mom and Kirk’s dad get married and all the bridesmaids/groomsmen dance down the aisle, that is exactly what they did.  So fun to watch!

Glee – Marry Me

I failed at taking photos [once again], but the rest of the night was filled with good food and good music. And some fun songs like ‘Lucky by Jason Mraz‘ sung by the newlyweds themselves.

It was a really fun wedding and hard to leave Maui the next day to go back to my beach-less home in Texas.

But now I’m back and I’m now baking for Thanksgiving tomorrow! I’m SO ready to eat :)
