It may have taken a while, but I made it home!
My flight was set to leave Boston at 6:30pm yesterday, but was delayed multiple times due to engine troubles. We finally left Boston around 8:30pm and were on our way back to Dallas.
Usually I can’t really sleep on flights but I was so tired I fell asleep during the last leg of the flight.
Then we landed and I thought we were home. But we weren’t.
Apparently there were too many thunderstorms and clouds in Dallas we had to divert down to Waco and fly back up North to land in Dallas. But since we had been taking the long route to Dallas from Boston, avoiding clouds from St. Louis to Dallas , by the time we made it to Waco our plane didn’t have enough gas to get us to back to Dallas. We ended up flying further down south to Austin to get fuel up.
It was quite an eventful night to say the least. I finally made it home this morning at 4am, slept a bit and woke up more than ready for breakfast.
No more breakfast in cups for me!
I went back to an old favorite. Pancakes.
An oldie, but a goodie.
With no trips to the grocery store in over a week the only available fruit this morning was a lone apple I brought back with me from Providence.
No worries though. I love apple pancakes.
This time I added diced apples into the batter. Best decision of the day, I’d say.
Fluffy and apple stuffed pancakes are really quite the way to start the day. Especially when your right eye all of a sudden feels a piercing pain and waters up like no other. And repeats every 5- 10 mins.
It all started midway through flipping pancakes. I would feel a pain in my eye, it would water up and then continue to be painful for another 20 seconds then go away. After the pain it would feel like I had something in my eye, then the pain would come again in a bit.
I was hungry though and wanted those pancakes!
Apple stuffed Pancakes
1 diced apple – 1/2 into the pancake batter and 1/2 for the topping
2/3 cups kodiak cake mix
2/3 cups water
1 T almond butter
Maple syrup
This breakfast takes no time at all, but taste like I spent a long time on it. I just mixed the kodiak cake mix with the water, added the diced apples to the mix and cooked up the pancakes on a dry non-stick skillet.
Then I heated up the remaining diced apples with a splash of water in the skillet until soft, mixed it with almond butter and topped it on the pancakes.
[Side note: It's been 9 days since I last had almond butter. It was a necessity.]
A slight drizzle of maple syrup and the first bite was taken.
YUM.
My eye pain continued as I ate so after I had my last bite [sad face] I called my optometrist.
Luckily she could fit me in 30 mins later.
The verdict?
I cut my eye. Right below my pupil.
Who would’ve thought? I don’t know how it happened, but it happened so now I have a lovely stick of antibiotic ointment to rub on my eye twice a day, along with a bottle of pain reliving drops.
Luckily it was something minor! In about a week my eye should be as good as new
And now that I’ve eaten the last piece of fruit in my house, I need to go participate in one of my favorite pastimes. Grocery shopping.
