Rain or shine, Sunday’s are always the perfect day for pancakes. To continue my welcome to summer, I decided to make some berry-filled pancakes. Peanut butter and berries pancakes to be exact.
You can’t really see it too well, but these pancakes are filled with juicy raspberries, strawberries, blueberries, and blackberries.
PB & Berry-licious Pancakes
- 1/2 cup kodiak cake mix
- 1/2 cup water
- 2 heaping T organic low-fat cottage cheese
- 1 T ground flax
- ~ 1/3 cup mixed berries (halved raspberries and blueberries, sliced strawbs)
The berries sweeten up the pancakes and keep them moist and doughy, just the way I like it. It’s still super dreary outside, but these pancakes really brighten up any morning.
Well, I’m off to bake up a batch of vegan samoas (perhaps with brown rice syrup instead of brown sugar this time) and then its off to Dicks Last Resort for my sisters birthday tonight. Have a nice and relaxing Sunday!!
