Do you ever have those mornings where you have so many breakfast ideas running through your mind that you just can’t decided?? That was me this morning (and pretty much every other morning )! Buckwheat bake, pancakes, oatmeal, smoothie, toast and nut butter…the list goes on. Everything sounded so good and being my usual indecisive self I just couldn’t make up my mind. That is until I glanced up and happened to see what was on the tv screen. Usually I am not the biggest fan of Paula Deen and her uber-buttery meals, but there was nothing else on and that was the only thing worth semi-watching. Good thing, because the moment I saw the Deen brothers making that stuffed french toast I knew I just had to have that for breakfast today. I also knew I needed a less butter-tastic version. Don’t need any clogged arteries before lunch..
The Un-Paula Stuffed French Toast (serves 1)
- 2 slices bread (i used Ezekiel 4:9)
- 2 heaping T low fat cottage cheese
- 1 small banana separated into two (can be frozen)
- 2 frozen strawberries
- 2-3 slices frozen peach
- 1 egg white or just a whole egg
- 2 dashes cinnamon
- 1 T milk (i used unsweetened vanilla almond milk)
- splash of 100% pure vanilla extract (optional)
First up, if you’re using frozen bread like I am, lightly toast it in toaster to defrost. While toasting, halve your banana and set 1 half aside to mash up later. Take your first half and along with the strawberries and peaches, and dice it all up into little pieces and mix. Microwave the diced fruit for 15 seconds, stir, and microwave another 15 seconds. Set aside.
Next, to make the filling, take the other half of your banana (if frozen microwave about 20-30 seconds) and mash up. Mix in your cottage cheese. Take about half to 2/3 of your microwaved diced fruit and mix into cottage cheese and mashed banana mixture. This is your filling. Set the other portion of your microwaved diced fruit to the side as it will be your topping later.
Lay your toast side by side and pour filling onto the center of one of your toast. Take the other toast and lay on top to form sandwich. Make sure not to press too firmly or the filling will squeeze out.
Next, whisk together one egg white or whole egg with cinnamon and vanilla. Pour onto a plate. Carefully take your sandwich and soak each side in the egg mixture. Make sure to get the sides too.
Heat skillet to medium heat and spray lightly with cooking spray. (I used an olive oil mist) Place sandwich onto skillet and cook about 5-7 mins on each side or until until browned and toasted and filling is warmed through.
Transfer to plate and top with the remaining diced fruit and whatever else you desire. I topped mine with the diced fruit, toasted coconut, and light sprinkle of flax.
Boy was this stuffed french toast satisfyingly good. It was exactly what I wanted for breakfast this morning. And it’s versatile so you can use whatever fresh or frozen fruit you have in your kitchen. I’m thinking a cherry filling would be quite tasty. If you use fresh fruit, which i would have had I had a more well stocked fridge, you can still microwave fruit to heat up and release the sweet juices.
